Skinner is the head chef at Gusteau's and the heir to the restaurant. At least, this was meant to be. Skinner, wanting custody of the restaurant, was horrified to discover that Linguini was the son of the great Gusteau himself.

The movie's antagonist, asides from Ego, he is desperate to keep Linguini from inheriting the restaurant. He is also jealous and upset at Linguini's quick fame, wanting the logo of the restaurant to be Gusteau, in hopes of added popularity. Skinner, even before knowing of Linguini's father, never liked the boy, as his mother was clearly of some important position in the restaurant. He is 'defeated' when the rats capture him and throw him into the pantry, bound and gagged. In the end, he reports the rat infestation, leading to the restaurant's eventual close.
